Equinox only uses meat of the highest quality. Each piece is carefully cured with a perfectly balanced salt mixture. Modern control techniques guarantee consistent quality. The meat matures slowly at a constant temperature, over a period of 4 weeks. Then it is transferred to the ‘chimney’, where it is smoked in the traditional way with natural wood. The result: pure smoked horse meat from Equinox, a top-notch delicacy.
Smoked horse meat
Equinox has a long history of smoking horse meat. The experience gained over time was expanded when the horse smoking department of Damar in Temse was taken over in 2002. Damar smoked meat is well-known for its extra sweet taste. This enables us to offer a range of smoked horse meat with different flavours ranging from classic to extra sweet.
At the end of 2005, the traditional, salted, smoked horse meat from Equinox was recognised as an Antwerp regional product by VLAM. Smoked horse meat is traditional in Antwerp and is still prepared in the traditional way. More information is available at regioproduct.be. Equinox uses thick flank cuts to produce smoked horse meat. Knuckle The highest quality cut of smoked horse meat! Perfect cutability and beautiful slices, a real treat for gourmet occasions. Knuckle is available in both traditional and extra sweet flavours and in different weights. We also offer knuckle in various shapes: a barrel shape for oval slices and a block form for rectangular slices.
Topside Prepared as smoked meat, the topside does not lose any of its well-known qualities. With its delicious, delicate flavour, which is highly valued by professional butchers, this is a classic in butcher’s shops. Just like the knuckle, the topside is available in both traditional and extra sweet flavours, shaped and unshaped.
Silverside Silverside is the cheapest cut of smoked. Traditionally prepared, and with an excellent price:quality ratio, silverside has all the qualities and characteristics of a good smoked meat cut. Silverside is available in both traditional and extra sweet flavours and in different shapes. We offer this delicious smoked meat cut in block form, roll form or tied.
Façon Suisse Façon Suisse is very popular with lovers of extra sweet horse meat. This specific preparation method ensures that this product has a low salt content (± 2%). The use of beech wood guarantees a unique smoky taste. The shaped knuckle is very firm and can be cut extra thin. Guaranteed success!
Tunnel This smoked horse meat cut is it lightly salted, smoked with whole blocks of beech wood and available in the shape of a tunnel, pre-cut or uncut. Smoked pork
Filet de Flandre ‘Sweet smoked meat’, i.e. smoked meat with a lower salt content, has become increasingly popular with consumers in recent years. Equinox aims to respond to this trend with the ‘Filet de Flandre’: smoked ham with a typical mellow flavour and low fat content. The ham is prepared in the same way as Equinox’s smoked horse meat: salted, cured and then smoked with beech wood. Our Filet de Flandre comes in a barrel shape as standard but is also available in roll form. This delicacy was awarded the Golden Tavola Caterer Award in 2006.
